  • 350 g cooked mussels from Prins & Dingemanse
  • 8 slices of savory pie dough
  • 25 g butter + extra for greasing the pie tins
  • 2 eggs, beaten
  • 1 leek, thinly sliced
  • 200 ml crème fraîche
  • 2 tsp curry powder
  • 40 g Parmesan cheese, grated
  • Pepper and salt
  • Optional, garden cress for garnish

A savory pie is always a good choice. How about this mini quiche with mussels, leeks, and curry? Perfect for brunch, lunch, or in small slices at a gathering.

Preheat the oven to 200 degrees. Melt the butter in a wok and gently sauté the leeks. Season with curry, pepper, and salt. Grease 8 small tart pans with some butter and line with savory pie dough. Prick the bottom with a fork. Beat the eggs together with the crème fraîche until smooth. Season with pepper and salt. Divide the leeks over the pans. Sprinkle with Parmesan cheese and then add the mussels. Pour some of the crème fraîche mixture into each pan. Bake the mini quiches for about 30-35 minutes, until the filling is set and the top is lightly golden brown.

Tip!

Garnish with some garden cress.

How do I cook my mussels?

Put the vegetables together with a splash of wine or beer in a large pot. Place the mussels on top. Sprinkle with pepper and bring to a boil with the lid closed. Shake the mussels during cooking. Can you freeze fresh mussels?

Fresh mussels in the shell should never be frozen. However, if you have cooked the mussels and can't eat them all, you can freeze the mussel meat after removing it from the shell. You can then add the mussels to soup or salad later, or fry them up nicely with some onion.
