  • 1/2 jar of mussels in vinegar 370 ml from Prins & Dingemanse, drained and mussels patted dry
  • Salt and pepper
  • 6 tbsp yogurt
  • 2 heads of little gem, ends removed and leaves separated
  • 2 tbsp olive oil
  • 100 g croutons
  • 1/2 lemon, juiced
  • 30 grams Parmesan cheese, coarsely shaved
  • 1/2 clove garlic, finely chopped
  • Garden cress for garnish
  • 1 tsp honey
  • 2 tbsp parsley, finely chopped
  • 1 leek, washed and cut into strips of 4 centimeters

First, make the yogurt dressing. To do this, mix the yogurt, olive oil, lemon juice, garlic, and honey together in a bowl. Season with salt and pepper. Distribute the leaves of the little gem over the plates. Spread the mussels in vinegar, croutons, and Parmesan cheese over them. Then drizzle with yogurt dressing and garnish with garden cress and black pepper.

Tip!

You can easily make croutons yourself. Cut 2 slices of stale bread into cubes. Put them in a bowl and mix with olive oil, salt, and pepper. Spread the cubes over a baking tray. Spread out and place in the oven. Bake for 25-30 minutes at 160 degrees. Turn halfway through.

How do I cook my mussels?

Put the vegetables together with a splash of wine or beer in a large pot. Place the mussels on top. Sprinkle with pepper and bring to a boil with the lid closed. Shake the mussels during cooking. When the shells are all open after about 5-8 minutes, the mussels are cooked. Serve them with baguette or fries and sauces of your choice. Check the traditional recipe for more information.

Can you freeze fresh mussels?

Fresh mussels in the shell should never be frozen. However, if you have cooked the mussels and can't eat them all, you can freeze the mussel meat after removing it from the shell. You can then add the mussels to soup or salad later, or fry them up nicely with some onion.
