  • 24 large Grevelingen oysters (Creuse 1/0)
  • 1 tablespoon capers
  • Mixed salad
  • 6 tablespoons balsamic vinegar
  • 4 tablespoons rice flour
  • olive oil
  • 1 shallot

Open 6 large Grevelingen oysters from Prins & Dingemanse (Creuse 1/0) per person and remove them from the shell. Place the hollow shells on large plates and fill them with some mixed salad. Mix 4 tablespoons of rice flour with some salt. Fry 1 finely chopped shallot in mild, extra virgin olive oil for a minute on high heat. Turn off the heat. Add: 1 tablespoon of small capers (without liquid), 6 tablespoons of balsamic vinegar, and 2 tablespoons of olive oil. Pat the oysters dry and coat them in the rice flour. Fry them for a minute in a deep layer of hot (sunflower) oil. Let them drain briefly and serve on the salad in the shells, with some of the warm dressing and freshly ground pepper on top.

How do I cook my mussels?

Put the vegetables together with a splash of wine or beer in a large pot. Place the mussels on top. Sprinkle with pepper and bring to a boil with the lid closed. Shake the mussels during cooking. Can you freeze fresh mussels?
