  • 44 pre-cooked mussels
  • Fresh thyme, only the leaves for garnish
  • 5 tablespoons chili sauce
  • Olive oil
  • 11 slices of Zeeuws bacon
  • 3 tablespoons mayonnaise

Thread 4 mussels alternately with the Zeeuws bacon onto a tapas skewer. Repeat until all the mussels are used. Heat olive oil in a frying pan and fry the mussel skewers for a few minutes on both sides. When the Zeeuws bacon changes color, remove the skewers from the pan. Meanwhile, make the chili mayonnaise. Mix the mayonnaise with the chili sauce. Place the mussel skewers on a serving platter and garnish with thyme leaves. Serve with the chili mayonnaise.

How do I cook my mussels?

Put the vegetables together with a splash of wine or beer in a large pot. Place the mussels on top. Sprinkle with pepper and bring to a boil with the lid closed. Shake the mussels during cooking. Can you freeze fresh mussels?

Fresh mussels in the shell should never be frozen. However, if you have cooked the mussels and can't eat them all, you can freeze the mussel meat after removing it from the shell. You can then add the mussels to soup or salad later, or fry them up nicely with some onion.
