In the Mediterranean Sea, the carpet shell is known as palourde or clovisse. This oval and flattened shellfish is about five centimeters in size. The color of the shellfish varies from white to black and from gray to yellow. The carpet shell appears to have a checkered pattern and is always spotted.

Cook the mussels according to the general recipe. Remove the mussels from their shells. Place 25 half shells on each of the four plates and put a mussel in each shell half.
