Wraps with mussels, tomato salsa and guacamole
|500 grams of Prins & Dingemanse cooked mussels||1½ shallot, finely chopped|
|8 - 12 small and soft wraps||2 cloves of garlic, finely chopped|
|Olive oil||3 limes|
|2 teaspoons of smoked paprika powder||2 ripe avocados, cubed|
|4 tomatoes, finely chopped||2 small tomatoes, without the heart and finely chopped|
|Coriander, leaves and finely chopped||Salt and pepper|
Wraps are always a good idea. Ever thought about filling them with mussels? Fry some cooked mussels in the smoked paprika powder. Put in the wrap and choose the toppings you like. For example tomato salsa and guacamole.
This is how you make tomato salsa:
Mix the 4 finely chopped tomatoes, a small bunch of coriander, 1 chopped shallot, 1 chopped clove of garlic, and the juice of two limes. Mix well and add salt and pepper to taste.
This is how you make guacamole:
Put the avocado cubes in a bowl and mash them together with the juice of 1 lime. Now add the finely chopped garlic, the 2 small tomatoes and the finely chopped shallot. Taste the guacamole and add salt, pepper and extra lime juice to taste.
This is how you make the wraps:
Fry the wraps for 2 minutes on both sides in a dry frying pan. Repeat until you have fried all the wraps. Heat a dash of olive oil in the frying pan. Add the mussels and sprinkle the smoked paprika powder evenly on top. Stir well and fry for a few minutes over a moderate heat. Now prepare the wraps. Put some mussels in the wraps and divide the tomato salsa and guacamole over the wraps.
