Steamed razor clams with sea aster and green-herb and garlic oil
Cover the bottom of a steam basket with Prins & Dingemanse sea asters. Add 7 to 10 Prins & Dingemanse razor clams per person. Put the steam basket in or on the steaming pan, over a layer of boiling water. Cover the pan with the lid and steam the razor clams for a few minutes until they are done. Serve them on a plate together with the sea aster and sprinkle them with coarsely ground pepper.
Serve this starter with warm olive bread and green-herb and garlic oil. For four portions, mix 100 ml of olive oil with 2 teaspoons of crushed garlic, 2 teaspoons of French mustard, a little salt, a liberal amount of coarse freshly ground pepper, and lots of chopped fresh green herbs (parsley, celery, thyme and a few rosemary needles). Leave the mixture to infuse for at least two hours.
