Spicy fried mussels on bread
ingredients
250 grams of Prins & Dingemanse cooked mussels 4 tomatoes cut in chunks
2 tablespoons of olive oil Optional, 1 tablespoon of flour
Knob of butter Salt and pepper
1 onion, finely chopped 4 slices of toasted bread
2 cloves of garlic, finely chopped 4 sprigs of green herbs, such as coriander or flat-leaf parsley, coarsely chopped
1 red pepper, deseeded and finely chopped

Do you have mussels left over from the day before? Turn them into spicy fried mussels on bread. A wonderfully delicious lunch dish. If you don't have mussels left over, we have cooked mussels as part of our range.

 

Heat the olive oil and a knob of butter in a frying pan. When the butter has melted, add the onion, garlic and red pepper. Fry over a low heat for 5 minutes. Turn up the heat and add the mussels to the pan. Fry 2 to 3 minutes Add the chunks of tomato and fry those too. Add a tablespoon of flour to bind the released juice. Add salt and pepper to taste. Put the fried mussels on the toast. Garnish with green herbs and some red pepper.
