Razor clams natural
|300 gram Prins & Dingemanse razor clams||1 stalk of celery|
|1 dash of dry white wine||1 peppercorn|
|1 onion||2 drops of lemon juice|
|2 sprigs of parsley|
Add a mixture of chopped onion, celery, parsley with a peppercorn (may also be fresh garlic) to a pan and add a dash of dry white wine. Cook or steam the mixture for approximately 7-8 minutes over a reasonably high heat. Take the razor clams from the pan and thicken the cooking juice with a bit of butter or cooking cream.
