Razor clams natural
ingredients | |

300 gram Prins & Dingemanse razor clams | 1 stalk of celery |
1 dash of dry white wine | 1 peppercorn |
1 onion | 2 drops of lemon juice |
2 sprigs of parsley |
Add a mixture of chopped onion, celery, parsley with a peppercorn (may also be fresh garlic) to a pan and add a dash of dry white wine. Cook or steam the mixture for approximately 7-8 minutes over a reasonably high heat. Take the razor clams from the pan and thicken the cooking juice with a bit of butter or cooking cream.
