Periwinkles in herbs
|500 g periwinkles||1 onion, peeled and chopped|
|400 ml mussel juice||1 Spanish pepper, chopped|
|6 sprigs of fresh thyme|
Bring the mussel juice to the boil with the thyme, pepper, onion and the Spanish pepper. Leave to boil for 8 minutes. Add the periwinkles and bring the stock to the boil again over a high heat. You need another 20 minutes for them to be done. Scoop the periwinkles from the stock and leave to cool.
