Oysters with soy sauce, coriander and lime
|6 oysters (per person)||Tabasco|
|150 ml Japanese soy sauce||Ginger syrup|
Mix 150 ml of Japanese soy sauce with the juice of a small juicy lime, a few drops of Tabasco, a few drops of ginger syrup and a few sprigs of fresh coriander (enough for approximately 48 oysters). Open 6 Prins & Dingemanse oysters per person, drain some of the juice from the shells. Drizzle the oysters with the soy dressing or serve the dressing separately so that people can help themselves. Garnish with a few coriander leaves and some very thin strips of chilli pepper that were marinated in vinegar for a few hours (which means they are no longer hot).
