Mini pizza with fresh cockle meat and southern herbs
|200 g Prins & Dingemanse fresh cockle meat||Sage|
|1 ball of dough for pizza||1 tablespoon of olive oil|
|2 tomatoes, skinned, deseeded and roughly chopped||Salt and pepper|
|Thyme||1 clove of garlic, peeled and chopped|
Braise the garlic in the oil with the tomatoes and add sage and thyme to taste. Mix into a smooth coulis. Divide the dough into portions and shape the mini bases. Cover them with a spoonful of coulis. Put the cockles and the grated cheese on top. Put them in an oven preheated to 180° for 6 minutes.
For about 8 pizzas.
