Lukewarm salad of seafood mix with southern ratatouille and rice
|400 g Prins & Dingemanse seafood mix||Thyme|
|200 g rice, cooked||Salt and pepper|
|3 tomatoes, peeled and deseeded||2 tablespoons of olive oil|
|1 aubergine, finely diced||2 tablespoons of freshly chopped basil|
|1 courgette, finely diced|
Braise the tomatoes in the oil with salt, pepper and thyme. Add the courgette and the aubergine and stir-fry for 5 minutes. Remove from the heat and add the rice. Finally stir in the seafood mix and the basil.
