Lukewarm salad of seafood mix with southern ratatouille and rice

400 g Prins & Dingemanse seafood mix | Thyme |
200 g rice, cooked | Salt and pepper |
3 tomatoes, peeled and deseeded | 2 tablespoons of olive oil |
1 aubergine, finely diced | 2 tablespoons of freshly chopped basil |
1 courgette, finely diced |
Braise the tomatoes in the oil with salt, pepper and thyme. Add the courgette and the aubergine and stir-fry for 5 minutes. Remove from the heat and add the rice. Finally stir in the seafood mix and the basil.
