Lukewarm salad of seafood mix with southern ratatouille and rice

400 g Prins & Dingemanse seafood mix Thyme
200 g rice, cooked Salt and pepper
3 tomatoes, peeled and deseeded 2 tablespoons of olive oil
1 aubergine, finely diced 2 tablespoons of freshly chopped basil
1 courgette, finely diced

Braise the tomatoes in the oil with salt, pepper and thyme. Add the courgette and the aubergine and stir-fry for 5 minutes. Remove from the heat and add the rice. Finally stir in the seafood mix and the basil.
