Fresh mussel meat in soy sauce marinade with mirin, seaweed and sesame
|300 g Prins & Dingemanse mussel meat||3 tablespoons of mirin|
|100 g fresh seaweed||Black pepper|
|1 leaf of nori||1 tablespoon of sugar|
|1 tablespoon of soy sauce|
Mix the soy sauce with the sugar, mirin and olive oil and stir until the sugar has dissolved completely. Add pepper to taste. Add the mussel meat and leave to marinade for 5 minutes. Rinse the fresh seaweed in plenty of fresh water and remove the hard parts. Roughly chop. Arrange the fresh seaweed in the middle of the plate, put the mussels on top and decorate with the finely chopped nori leaf. Drizzle the rest of the marinade around it.
