Extremely easy to prepare and wonderful to enjoy. As a starter or with drinks. These carpet shells Portuguese style are a brilliant idea. Enjoy with chunks of fresh bread and a glass of glass vinho verde.

Heat a good lug of olive oil in a large pan. It is important that the carpet shells have room to open, so choose a large wok or frying pan. Add the garlic and fry gently over medium heat. Do not let the garlic brown. Add the carpet shells, white wine and black pepper. Turn up the heat. As soon as the wine is boiling, turn the heat to low and put a lid on the pan. Steam the shells until they open. Shake the pan from time to time with a rotating motion. Pour the lemon juice over the carpet shells and add the coriander. Shake once more and serve immediately.

TIP! Eat the carpet shells Portuguese style with bread, which you can use to mop up the juice.
