There are hundreds of different types of lobsters - ranging from langoustines and crayfish to ‘the big guys’ from Nova Scotia (northeast Canada). Lobster can be supplied frozen (in its own juice in so-called tubes), but fresh is best of course. For many people a fresh boiled lobster is a true delicacy and the content of the legs is the absolute best.
