Fresh oysters

Creuse de Zélande, Dutch oyster, also known as the Creuse or hollow oyster, has an irregular shape. It grows over a period of two to three years. Just like wine, the oyster acquires the flavour of the area in which it grows. The Oosterschelde is an estuary that can be calm or rough, but the oyster is fully accommodated to the environment. The lightly peaty seabed provides the delicate flavour with salty and fruity notes of the Zeeland oyster. The Oosterschelde water adds a robust sea flavour. The flavour shows that the oyster is a worker, sometimes it rests and tastes full and creamy. If it needs to work hard, the taste is not as full and you taste the pure strength of this oyster.

Usage / taste

The Dutch oyster has a silty flavour with fruity notes and can be eaten raw or warm. Raw with a little fresh pepper and lime or with a soy dressing. Warm it can be served au gratin, poached or deep-fat fried
