Along the Mediterranean, the carpet shell is known as the palourde or clovisse. This oval and flattened shellfish is approximately five centimetres in size. The colour of the shellfish ranges from white to black and from grey to yellow. The carpet shell appears to have a checked pattern and is always spotted.

|Usage / taste||
The flavour of the fine and tender meat is valued highly. The shells add a lovely silty flavour to the dishes. This shellfish must be cooked or stir-fried for no longer than 3 minutes and is delicious in pasta sauce, fish stews or soup.
